macOS is tired of switching to a connected audio output/input device as soon as it becomes available, which can be convenient but isn’t always ideal. This can get very annoying if you want to use a Bluetooth headset instead of a microphone, for example.
audio device interceptor Make your life easier by preventing specific input or output devices from being used entirely. Applications will revert to the previously used device or one or more backup devices when your Mac attempts to switch to them.
Configuring the application is fairly simple. Access settings from the menu bar and connect any audio devices you want to manage. From the list of available devices, move the item to the block list or backup list.

Fallbacks can be reordered and will be used according to their priority. If the top one is not currently connected, the application will use the next one, and so on.
Now, when a device is connected, macOS will try to switch to that device, but the audio device blocker will revert to the previously used device or the first device in the fallback list. Notifications can also be displayed when a device is blocked.
Interestingly, input and output devices are configured separately. For example, this means you can block the microphone on your headphones but still use them as an output device.
Audio device blockers are very easy to configure and unobtrusive. Once you complete the setup, it will continue to work silently in the background. It’s especially useful if you use multiple third-party audio devices and have strong preferences about which third-party audio device you use for sound input and output.
